G’s Felafel

February 25th, 2010 , Nutritious Foodie

Ingredients:

-  1 can Chickpeas, drained and rinsed
-  1 Shallot or 1/2 small onion
-  2-3 cloves of Garlic
-  3 tbps Italian Parsley, chopped
-  3 tbsp Cilantro, chopped
-  1 tsp Cumin
-  1 tsp Coriander
-  1 tsp Paprika
-  1/4 tsp Cayenne Pepper
-  Juice of 1 Lime
-  1 tbsp Olive oil
-  2 tbsp Quinoa Flour*

* I had some quinoa at home and using my magic bullet made some quinoa flour to use in this recipe.

Directions:

-  In a food processor combine all ingredients except for the chickpeas
-  Mash the chickpeas in with a fork and fold the well mixed ingredients into the chickpeas
-  Roll into small balls and place on a baking dish
-  Bake for 5-8 min under broil @ 500°
